Chop Suey Recipe

Pork Chop Suey

Servings: 3-4

Pork Chop Suey is a dish of Chinese-American origin and a favorite in the Philippines.

Ingredients

250g pork
½ tsp soy sauce
½ tsp oyster sauce
salt and pepper, to taste
1 tsp cornstarch

3/4 cup chicken broth
1 Tbsp cornstarch
1 Tbsp. oyster sauce
½ tsp sugar

1/4 cup vegetable oil
2 cloves garlic, minced
1 onion, chopped
1 cup carrots
1 cup broccoli, chopped
1 cup cauliflower, chopped
½ cup green or red bell pepper (capsicum), chopped
1 cup baby corn
½ cup beans or snow peas
½ cup mushroom, sliced

10-12 precooked prawns

Preparation

  1. Cut the pork into thin strips.
  2. To make the marinade combine and mix soy sauce, oyster sauce, salt, pepper, and cornstarch. Pour over the pork in a bowl and leave to marinate for 10 to 15 minutes.
  3. In a separate bowl whisk together the chicken broth, cornstarch, oyster sauce and sugar.
  4. Heat oil in a wok or frying pan over medium heat. Add pork and fry for 3 minutes until browned. Remove pork from wok and keep warm.
  5. Add garlic and onion and fry for 2 more minutes until onion is soft and clear.
  6. Add carrots, broccoli, cauliflower, corn, bell pepper and beans or snow peas. Stir fry for 3 minutes. Towards end of this time add mushroom and prawns.
  7. Add the cornstarch mixture which you set aside earlier. Bring to the boil, then reduce heat to a simmer. Stir until sauce thickens. Correct seasonings.
  8. Remove from heat and transfer to a serving dish or platter.


Serving

Serve hot with rice.
